1You will also need 1 package of fruit pectin. This jam is very good. In a Dutch oven, bring blueberries and water to ao boil; mashor stir for 5 minutes. Add sugar and honey; boil gently uncovered over medium heat for 30 minutes stirring frequently. Reduce heat to low for another 15 minutes stirring frequently. Test for doneness. If needed, return to heat until desired consistency (this jam will be a little runny, but will thicken upon sitting). Skim off foam and carefully ladle into hot 8oz. jelly jars leaving 1/4 inch headspace. Remove air bubbles, wipe rims and adjust lids. Process for 10 minutes in a boiling water canner. Makes 4-6 half-pints (8oz. jars).
