Recipe Description This sauce is part-way between a marinara and a bolognese, with the pork adding a lot of flavor, but without the mealy consistency of a ground meat sauce. The pasta takes a bit longer, but it is well worth it, compared to store-bought brands

Homemade Pasta with Red Sauce
Ingredients

onion1 Large onion, chopped

tablespoonsolive oil

poundpork loin, country-style ribs

cans (6 oz)tomato paste

can (15 oz)Hunt's Diced Tomatoes with juice

teaspoonssalt

teaspoonsblack pepper

teaspoongarlic powder

tablespoonbasil

teaspoonsoregano

Sequence Step
1Sautee chopped onion with olive oil in large pot for 5 minutes, or until onion becomes translucent
2Remove pork from bone, and cut into 2 in. cubes. Add to sautee mixture.
3When pork is browned, add tomatoes, paste, and 4 cups water.
4Bring to boil. Add salt, pepper, basil, oregano.
5Reduce heat to low, let simmer at least 30 minutes. If simmering more than 1-2 hours, may need to periodically add water.

1*May need to be split into two different batches*
2Measure flour and salt into food processor
3Beat eggs and olive oil in bowl
4Add egg mixture to food processor while running. Immediately stop after adding.
5Add 1-3 tsp water to food processor, running in spurts, until mixture starts sticking to sides.
6remove from processor and let rest in a ball for 5-10 minutes.
7Roll out and cut into desired width using pasta machine.
8Boil in salted water for 1-2 minutes (spaghetti), 3-4 minutes (fetuccine), 5-6 minutes (pappardelle)
