large (2-1/4 per lb, approx 3-3/4" long, 3" dia)green bell pepper, 1/2 inch dice

canTomatoes, red, ripe, canned (32 oz) diced

can (6 oz)tomato paste

tablespoonschili powder - to taste

teaspoonsalt, to taste

teaspoonsblack pepper, ground

cupkidney beans, organic

cupsRed beans, canned (15oz), drained

cupBlack beans, canned (15oz), drained/rinsed

cupsBeans, navy, canned drained & rinsed
Steps
Sequence Step
1Chop onion and bell pepper, begin sauteing over low heat. Peel and mince or crush garlic; add to onion / pepper mixture. Saute over low heat until onion is translucent. Add diced tomatoes and tomato paste; stir well. season with chili powder and salt and pepper to taste. (Add sliced jalapenos if desired.) cook over medium-high heat; about 5 minutes. Transfer mixture to a large pot (or crock pot).
2Add beans (do NOT drain). Add additional chili powder, or jalapenos, or ground red pepper,etc., to taste. Bring jsut to a boil over medium heat, then simmer covered, at least 30 minutes.
3Serve over Fritos and top with grated sharp cheddar cheese.
