Red Cabbage Cake

small box (1.5 oz)raisins, seedless

Steps
Sequence Step
1Pre-Heat oven to 350 degrees and prepare three 9in round cake pans with non stick spray.
2Sift together Flour Sugar, Baking powder, Baking soda, Cinnamon, Nutmeg and Salt. Set aside.
3In stand mixer on medium speed, mix Eggs, buttermilk, Oil and Vanilla.
4Add the dry ingredients slowly to the wet ingredients, mix on slow speed till combined, scrape sides of bowl.
5Mix on Med-High for 30 seconds to 1 minute or till creamy.
7By Hand, mix in carrots, cabbage, and raisins. Mix well.
8Pour into three 9in round cake pans sprayed lightly with oil. Bake at 350 for 25-35 min, or till toothpick poke comes out clean in the center of the pan.
9Remove from heat, let stand in pans for 10 min to cool, then turn out to cooling racks, cool completely before frosting.
