Steps
Sequence Step
1Cut pork (lean and fat) into cubes about 1/4 inch square.
2Chop onion and garlic very fine.
3Dice ham and cut sausage into pieces.
4Melt butter in a heavy iron pan or Dutch oven.
5Add onion, garlic, pork and ham; brown slowly, stirring frequently.
6Add sausage, bay leaf, parsley, thyme and clove; cook about 5 minutes.
7Add broth, Tabasco and salt; bring mixture to a boil.
8Add washed rice.
9Cover and simmer gently a half hour or longer until rice is tender.
10Stir often to mix well.
11Season to taste.
