cupsCauliflower, coarsely chopped

medium (2-1/2" dia)Onion, chopped
1
stalk, large (11"-12" long)celery, diced
1
large (7-1/4" to 8-1/2" long)carrots diced

clovesgarlic minced
4
cupschicken broth or stock
4
tablespoonsbutter melted
4
tablespoonsflour unbleached
2
cupscup milk 2%
1
fluid ouncemarsala wine
2
cups dicedpotatoes, peeled, chopped
3
slices rawbacon, chopped and cooked and drained of fat
3
ouncesham, cooked and cubed
2
tablespoonsparsley, chopped
Steps
Sequence Step
1Cover chopped veggies(except potatoes) with chicken broth in a deep pot. Cook 20 min. till soft.
2Blend with immersion blender till smooth.
3Add peeled, chopped potatoes, simmer 15 min. till soft, but remain in pieces.(Do not blend)
4Make white sauce. Melt butter, add flour, then gradually add milk till all is thickened.
5Add marsala wine to white sauce. (can use any wine or sherry)
6Add white sauce to blended veggie pot.
7Saute bacon and add to pot.
8Add chopped leftover ham, diced.
9Season with parsley, salt and pepper if needed. Simmer to blend all.
