cupgranulated sugar

medium (7" to 7-7/8" long)mashed bananas ripe

cupsour cream

cupsall-purpose flour

teaspoonbaking powder

teaspoonbaking soda

teaspoonlemon juice, fresh (can use bottled)

teaspoonvanilla extract/pure
Steps
Sequence Step
1Preheat oven to 350°F. Grease lightly and flour 3 mini loaf pans. In large bowl with electric mixer beat together margarine and sugar until creamy. Add mashed bananas, eggs, vanilla and lemon juice, beat until smooth. Add sour cream and beat until just combined. Stir together flour baking soda and baking powder. Add flour to mixture and beat until combined. Batter should be lumpy. Pour batter into pans. Bake approx for 40 minutes or until toothpick comes out clean. Let bread rest for 10 minutes, then turn out onto a wire rack to let cool completely.
