1 | Preheat oven to 350 degrees |
2 | Line muffin tins with paper liners |
3 | Combine first five ingredients (dry) |
4 | In a large bowl, cream sugars with the butter until light and fluffy |
5 | Add eggs, banana, maple flavoring and syrup until combined thoroughly |
6 | Begin to fold in dry ingredients in 3 stages, making sure each is incorporated before adding more |
7 | Use a 2” ice cream scoop to fill each liner exactly 2/3 full for average size muffins. No batter drippings all over the counter or edges of the pan. They’re all perfectly proportioned to the same size so they will cook evenly |
8 | Bake for 25 minutes or until a toothpick comes out clean. |
9 | If you don''t mind the extra calories, this muffin is great with a light glaze or with the addition of white choc chips (about 1 cup to the recipe as a last addition to the mix) |
