Steps
Sequence Step
1Over medium heat mix cornflour and 2 tbs. of milk in a sauce pan. Add remaining milk and bring to a boil, cook for a few minutes until thickened. Stir in low fat margarine and vanilla. Let cool.
2Keep one half of an apricot aside for decoration. Then puree the rest with the juice in a bledner, or food processor. Fold into milk sauce.
3Cut half of apricot into fourths, spoon the mousse evenly into the cups and top with the half apricot.
4Chill at least one hour before serving.
