Steps
Sequence Step
1Cream butter, shortening and confectioners sugar together until light and fluffy.
2Beat in extract.
3Gradually add flour and mix well.
4Shape into 1/2" balls and place 1" apart on ungreased baking sheet.
5In small bowl, place 2-3 drops of red food coloring. Add 1/2 cup of the sugar and mix well.
6In another small bowl, place 2-3 drops of green food coloring. Add the remaining 1/2 cup of sugar and mix well.
7Take the bottom of a tablespoon, spray with non stick cooking spray and then dip in the colored sugar.
8Flatten dough balls alternately with the back of the spoon, redipping in sugar as needed.
9Bake at 375 degrees for 8-10 minutes or until edges are lightly browned.
10Remove to wire racks and cool completely.
11To make frosting, in small bowl beat the 2 Tbls of butter until fluffy.
12Add confectioners sugar, milk and extract. Beat until smooth.
13Spread over the botton of half the cookies and top with another cookie to form a sandwich.
14To add extra flavor to frosting, can beat in 1/4 tsp peppermint extract and/or add crushed peppermint candies.
