cupschocolate chips, semi sweet, Ghirardelli

cupcream, half and half, fat free

tablespoonpure Vermont maple syrup

cup, halves and wholecashews (toasted)

teaspooncourse sea salt

Sequence Step
1Place chocolate in a medium bowl
2Preheat oven to 350''''F. Place cashews on a baking sheet. Bake 8 to 10 minutes or until golden, stirring once. Set aside 40 whole cashews
3In a food processor combine remaining cashews and the salt. Cover and process with several on/off turns untill nuts are finely chopped. Transfer finely chopped nuts to a small bowl; set aside.
4Divide chocolate mixture into 40 portions. Place a whole cashew in the center of one portion; shape into a ball. Roll ball in the chopped cashew mixture; place on baking sheet. Repeat to make 40 truffles total. Cover and chill. Let stand at room temperature for 30 minutes before serving.
5NOTES: recipe called for 8 ounces bitter sweet chocolate which made the candy to bitter for my taste so I changes the chocolate. You may need more groung cashews than the recipe calls for Work quickly with dough as it softenes easily, may have to rechill
