Recipe Description These are a simple oatmeal cookie suitable for Diabetic use (count the carbs!) They are also very versatile. You can put cooked date mixture in between for a quick date square. They can be spread with jam or anything else you like!

cupsoats, quick-cooking

teaspoonsalt

cupShortening, vegetable
1/4
cupcup 2% milk or skim
1/2
teaspoonTruvia, Stevia (or sugar sub. of choice) sugar free honey
Steps
Sequence Step
1Mix flour, oatmeal and salt. Add melted shortening and mix well, then add milk to which you have added the sweetener (after trying these, adjust the sweetness to taste. I like them plain!)
2Roll out on slightly floured board. Cut into 24 cookies.
3Bake at 350-375 deg F until golden brown. (I usually double the recipe as they don''t last long.)
