Steps
Sequence Step
1Place dried beans in a large stock pot and cover with 2 quarts water. Bring to a boil and drain.
2Return the beans to the stock pot and add 10 cups fresh water to pot. Return to cooktop and start them cooking over medium-low heat.
3While the beans are starting their second boil, place onions, peppers, and celery in a large skillet with 1/2 cup butter and 1/4 cup olive oil. Saute about 1/2 hour over very low heat. Add Essence and continue to sauté for about 5 minutes.
4Pour vegetable mixture into pot of beans, add 3 cloves of chopped garlic and continue to cook over medium-low heat for about 3 hours. Stir frequently.
