cupoil, canola or olive

cup, choppedGreen Onion, thinly sliced

cupsquinoa raw

cupsVegetable stock

teaspooncinnamon, ground

teaspoonblack pepper

teaspoonkosher salt

cups, cubesSquash, butternut, (oven roasted before preparing)

cups, choppedcranberries, dried

cup, choppedwalnuts, toasted

cupparsley, italian, chopped
Steps
Sequence Step
1Season squash with Salt, Pepper, and Garlic; Toss in a bowl with Canola Oil. Roast @ 375 degrees until tender (approx 10-15 minutes). Allow to cool. Dice.
2Cook Quinoa according to directions in Vegetable Stock (stock to quinoa ratio is 2:1). Allow to cool.
3Combine all ingredients in a large bowl and toss until all items are evenly distributed.
