Recipe Description This is a tested recipe to make your own mayonnaise. Some families use a lot of mayonnaise, so it is an important food to get right. I use organic canola oil and eggs. It is very easy to do.

Steps
Sequence Step
1Combine the egg yolks, tablespoon of lemon juice, dry mustard and the salt in a large bowl. It helps to nestle this bowl in a larger bowl on an angle held on place by a tea towel so that you can use the whisk in one hand and dribble the oil in the other. Whisk these ingredients until well mixed.
2While beating the mixture in the bowl, slowly dribble in the oil. The mixture should get quite thick and hard to beat. You might have to stop and rest your hand a few times. If it doesn''t thicken, stop, clean out the bowl and start again. You can add the unthickened mixure in again once you get a mixture that will thicken.
3Once all the oil is beaten into the mixture you can slowly add the rest of the lemon and the other ingredients. You can add or subtract the ingredients to taste.
4Put in a jar and refrigerate. You will be amazed at the pleasant difference between this wonderful confection and ''store bought'' mayo.
