1 | Turn on oven to 350 degrees |
2 | Spray muffin tins with no Stick baking spray or line with cupcake liners |
3 | Grind oatmeal to a coarse flour like texture using a food processor or grinder |
4 | Mix dry ingredients in a bowl, and wet ingredients in a separate bowl then pour the mixed wet ingredients into the dry and mix till cake like consistency. Approximately 3-5 mins. |
5 | Scoop batter into muffin tray with an ice cream scooper or a ¼ cup dry measuring cup per muffin. This will keep the size of the muffins consistent. You may get up to 14 muffins. |
6 | Bake for approximately 18-20 minutes or until tooth picks inserted into the center of a muffin comes out dry. |
