| 1 | Thaw and brine 4 small skinless chicken breasts. | 2 | After chicken breasts have brined 30-45 minutes. Rinse in cool water and pat dry. Slice chicken breasts in half and set aside. | 3 | Take a fresh pineapple, peel and slice into 3/4" thick slices. Cut pineapple slices into 8 quarters and set aside. | 4 | Take one large bell pepper and core/remove seeds. Slice pepper into 1-1 1/2" square/rectangle pieces and set aside. | 5 | Take 12" bamboo skewers that have been soaking in water for 30-45 minutes (while chicken was brining and prepping pineapple/pepper) and thread with pepper, pineapple, chicken half,pineapple,chicken half, pepper and pineapple. | 1 | In a medium saucepan, add sugar, soy sauce, ginger, garlic. Cook over medium heat until sugar dissolves. | 2 | Dissolve cornstarch into mirin and add to saucepan. Bring to a boil while stirring frequently. | 3 | Reduce heat to Low-med and allow sauce to simmer and reduce to a slightly syrup like consistency.
