Teriyaki Chicken with Fresh Pineapple and Bell Peppers

1Thaw and brine 4 small skinless chicken breasts.
2After chicken breasts have brined 30-45 minutes. Rinse in cool water and pat dry. Slice chicken breasts in half and set aside.
3Take a fresh pineapple, peel and slice into 3/4" thick slices. Cut pineapple slices into 8 quarters and set aside.
4Take one large bell pepper and core/remove seeds. Slice pepper into 1-1 1/2" square/rectangle pieces and set aside.
5Take 12" bamboo skewers that have been soaking in water for 30-45 minutes (while chicken was brining and prepping pineapple/pepper) and thread with pepper, pineapple, chicken half,pineapple,chicken half, pepper and pineapple. Repeat for remaining chicken and skewers.
6Place skewers on a medium hot grill and cook approximately 4-8 minutes, turning to avoid burning until chicken is cooked through.
7Place on cookie sheet, cover with foil and keep warm until ready to eat.




Homemade Teriyaki Sauce
Ingredients

cupsoy sauce

tablespoonsMirin (rice cooking wine)

teaspoonsCornstarch

teaspoonsfresh ginger, grated

clovesgarlic grated

1In a medium saucepan, add sugar, soy sauce, ginger, garlic. Cook over medium heat until sugar dissolves.
2Dissolve cornstarch into mirin and add to saucepan. Bring to a boil while stirring frequently.
3Reduce heat to Low-med and allow sauce to simmer and reduce to a slightly syrup like consistency. Remove 2-4 tablespoons and set aside to baste the uncooked skewers with before grilling.
4When meal is completely cooked, drizzle teriyaki sauce from the pan or small bowl onto the skewers that you''ve laid over a small bed of cooked wild rice.




Wild Rice

1Cook a bag/box of Uncle Ben''s Whole Grain and wild rice according to manufacturers instructions.
2Plate desired amount in center of plate, cover with 1 or 2 cooked chicken skewers and drizzle with teriyaki sauce. Serve hot.
