Amt. Measure Ingredient
2
cupsall-purpose flour (approx.)
1
1/2
teaspoonsbaking powder
1
teaspoonsalt
1/2
tablespoonoil, vegetable
3/4
cupfat free milk
Steps
Sequence Step
1Mix together flour, baking powder, salt, and oil. Warm milk for 30 sec in the microwave and add slowly to the flour mixture until a loose sticky ball is formed
2Turn dough out on to a floured surface. Knead for two minutes. Resulting dough will be firm and soft. Cover dough with a damp dish towel and let rest for 20 minutes. **Do not skip resting the dough, otherwise it will be too elastic adn will not hold its shape when rolled out.**
3After resting break the dough into 10 equal sections rolling into balls making sure they don''t touch. Recover with dish cloth and let rest for another 10 minutes.
4After final resting, tear off two pieces of waxed paper or saran wrap. Place one piece of dough in the center of the wrap and press down slightly with your hand. Cover with the other piece of wrap. Roll out dough from the center and turning out as needed until 6-8" in diameter.
5In a dry skillet or griddle heated on high cook for 30 seconds on each side. The tortillas will puff as they cook. Cover cooked tortillas covered until ready to serve. Reheat tortillas wrapped in foil if needed in a warm oven. Serve.
