cupold-fashioned rolled oats, grind into flour with a coffee grinder

medium (2-3/4" dia) (approx 3 per lb)apples, peeled and shredded (1 cup worth)

cup, gratedcarrot, grated

cupcoconut flakes, unsweetened, meduim

cup (not packed)raisins, seedless (or can use 1/4c raisins and 1/4c currants

cupPineapple juice, crushed, in it''s own juice (OPTIONAL)

Steps
Sequence Step
1Mix first six ingredients together and set aside.
2beat egg with fork or whisk, add milk and oil. Whisk again. Add apples, carrots, coconut, raisins, vanilla, pineapple (optional) and walnuts (optional).
3Add dry ingredients and mix until well blended.
4Spoon into lined muffin tins (about 3/4 full) and bake at 390 degrees for 20-25 minutes until toothpick comes clean.
