Recipe Description A new one for me, love green chiles and quinoa...want to know the nutrient value and calories per serving. Also, to help count points for Weight Watchers.

tortillas (approx 7-8" dia)flour tortilla, whole wheat

tablespoonGreen chiles, 4 oz canned chopped, jalapeno

cup, shreddedCheese, Monterey Jack

cupCheese, cheddar, shredded

cupcilantro, fresh, chopped
Steps
Sequence Step
1Cook quinoa in water according to box instructions. Set aside.
2Coat a large saute pan with cooking spray and place over medium heat until hot. Add garlic, scallions, onion and saute until translucent, stirring occasionally. Stir in tomatoes, pinto beans, cumin, salt, oregano, chile powder and simmer for additional 5 minutes.
3Preheat oven to 325
4Coat a 13 x 9 x 2 inch baking dish with cooking spray. Arrange tortillas in dish and top with tomato mixture. Cover with cooled quinoa and green chile strips. Cover and bake for 25 minutes or until thoroughly heated. Sprinkle with cheeses and cilantro. Bake an additional 5 minutes to melt the cheeses. Serve with sour cream and your favorite salsa.
