Ingredients
Amt. Measure Ingredient
2
cupsbread crumbs (soft)
2
largeeggs
1
onion1/2 cup medium onions chopped
1/2
Usda default (100 gm - 4 oz)Velveeta cheese
1.5
poundsBeef, ground, 80% lean meat / 20% fat, raw
1
carrot (7-1/2")carrot, grated
2
tablespoonsYellow Prepared Mustard
0.5
cupsKetchup
1.5
cups, packedbrown sugar
Steps
Sequence Step
1Crumble 3 or 4 pieces of bread into large bowl.
2Break eggs, add to bread crumbs.
3Chop onion, add to bread
4Shave carrot, add to bread and egg mixture.
5Tear or cut Velveeta cheese into chunks. Add to bread crumbs, onion, carrot
6Using large fork, combine all ingredients until bread is mushy. Add ground beef. Using hands now, mix well making sure all ingredients are blended well. Add 1/2 tsp. of pepper
7After meatloaf is packed into pan, make glaze for topping. Combine mustard, brown sugar and ketchup in small bowl. Mix very well - pour over meatloaf. Bake at 350 degrees for 1 hour. If using a large loaf pan, extend time to 1 hour/15 minutes to make sure middle of loaf gets cooked all the way through.
8After removing from oven, allow meatloaf to sit for 10-15 minutes. This makes it easier to remove from pan. Transfer to large platter for serving. It may take 2 people (and 4 spatulas,) to remove loaf from pan, so that it doesn''t break in half. NOTE: This is NOT a ''light'' meal.
