Lighter Snickerdoodles Recipe
This is a light, crunchy cookie.

Splenda White Sugar blend
Margarine, light- (I can't believe it's not butter)
Cheese, cream, low fat
egg whites made by Egg Beaters
flour, all purpose
cream of tartar
Preheat oven to 375 degrees. Cream sugar, margarine and cream cheese til light and fluffy.
Beat in eggs until smooth.
Sift together flour, cream of tartar, baking soda and salt. You can use a whisk to mix the dry ingredients. Add flour to the creamed mixture (it will get thick).
Place in bowl, cover and chill for 1 hour.
Roll a teaspoon of dough into ball and roll in sugar and cinnamon mixture (1/4 cup sugar and 2 tsp. cinnamon or more per taste).
Prepare cookie sheets with baking spray or parchment paper 2" apart. Slightly flatten with bottom of glass and bake for 8-10 minutes or til lightly browned.
