cans (15 oz)black beans, canned, Bush's

cans (28 fl oz)tomatoes canned, diced

package (10 oz)Baby Spinach Leaves, raw

tablespoonschipotle chili pepper in adobo sauce, chopped

teaspoonscumin, ground
Steps
Sequence Step
1Saute onions and garlic on medium low heat until soft
2Add carrots and cumin, saute for 2 minutes
3Add celery and sweet peppers, saute until all vegetables are softening.
4Add UNDRAINED beans and tomatoes, as well as chipotle.
5Simmer until all vegetables are soft to the bite.
6OPTIONAL (but great) Use an immersion blender for about 20 quick pulses to puree some of the ingredients make the broth more "creamy"
7Add spinach, simmer until it is just cooked.
