medium (2-3/4" dia) (approx 3 per lb)apples, peeled, cored and diced

cups, choppedPeppers, sweet, red, raw, chopped

onionred onion, chopped fine

pounds, rawboneless, skinless chicken breasts
Steps
Sequence Step
1Fill a large pot with water. Place the chicken breast in the pot and bring to to a boil. Cook approximately 20-25 minutes until chicken is thoroughly cooked. Drain the water and allow the cooked chicken to "rest" in strainer for about 5 minutes before dicing.
2In a large bowl, combine the chopped apple, diced red pepper, diced onion and the juice of one lime. Add the mayonnaise, curry, cumin, cayenne pepper and salt. Stir together till thoroughly mixed.
3Once the Chicken has been cooked and had time to "rest". Either dice it by hand into small pieces or put it in a food processor. Add the chicken to the large bowl with the mayonnaise mixture. Stir together and then serve with your favorite corn chip.
