1
1/2
pounds, rawchicken breast halves
1/2
medium (2-1/2" dia)Onion, chopped
2
tablespoonsextra virgin coconut oil
30
tablespoonsGreen chiles, chopped - (canned - 14 ozs)
8
ouncescream cheese, softened
1
cup, shreddedCheese, cheddar
1

1/3
cup, fluid (yields 2 cups whipped)heavy cream
Steps
Sequence Step
1Heat oven to 350
2Cut chicken into appx. 1 inch cubes (or stew the chicken in water until cooked enough to shred)
3In an oven proof skillet, cook chopped onion in coconut oil (or butter) until translucent.
4Add chicken and 14 ounces of chopped green chlies.
5When onions, chicken and chilies have come to a low boil, add cream cheese. Stir until cream cheese is melted and smooth.
6Combine the cheeses; sprinkle over the chicken then add the cream over the cheese.
7Bake at 350 for 45 minutes, checking to make sure the cheese gets bubbly, not burnt. If using cooked chicken, bake for 35 minutes. This is so good!
