4	sweetpotato, 5" long	Sweetpotato
1/2	package (10 oz)	Spinach
3	stalks	green onion tops, chopped
3	cloves	garlic minced
1/4	cup	Cheese, cream, low fat
1	Usda default (100 gm - 4 oz)	Sour cream, fat free
1	cup	Chickpeas (garbanzo beans), canned
1	cup, shredded	mozzarella cheese

1	Bake Sweet pot. saute onion, garlic and spinach, add cheeses and sour cream. Remove sweet pot from oven and cut in half place spinach mixture on potato and bake 10 min to melt cheese
