crust, single 9"Pie crust, standard-type, frozen, ready-to-bake, enriched

cupcream, half and half

teaspoonblack pepper (best if freshly ground)

cup, choppedzucchini, skinless, chopped into small pieces

cup, choppedOnion, choppedm (use amount based on your love of onions...1/2 is only a guideline)

Sequence Step
1Use froken pie crust - 9", deep dish.
2Beat together 6 eggs, along with half and half. After thorougly mixed, pour in most of cheese. (You can use more or less cheese depending on your preference. This recipe is excellent with cheddar, swiss or mozzarella cheeses.)
3Sprinkle base of pie crust with remaining cheese for a thin layer before you add the egg mixture.
4Gently mix in the spinach leaves, chopped zucchini, and chopped onions. Season to taste with pepper and salt. In the past, I have amended this recipe to add other tastes like fresh fennel or garlic or nutmeg...all with great results. Just depends on what flavors you''re going for.
5Once mixed thorougly, pour into the pie crust over layer of cheese.
6Bake in 375 degree oven for approximately 50 minutes. Make sure you test it to see if it''s truly cooked through. A fork or toothpick can be inserted in the middle and should come out clean if fully cooked. Crust should be golden brown. If it''s getting too brown for your taste, put foil around the outside edge of the crust to protect against burning.
