1Slice zucchini, thin slices Chop peppers Slice mushrooms -- set aside
2Spray medium skillet with cooking spray, add ground turkey sausage and cook till done. Drain any fat. I used Jennie-O 98% fat free turkey sausage, so not much to drain. Set aside
3Pour zucchini, and peppers into skillet just used to cook the sausage cook until tender with slight crisp, then add sausage back to skillet, stir and cook a few more moments on low to mix the flavors.
4Prepare a casserole dish -- spray with cooking spray, I used pam butter flavor. Empty sausage mixture into dish, cover with 1 cup of the shredded cheese.
5Beat the 4 eggs and add the cup of egg beaters and the milk, whisk together then pour over sausage mixture, give a little stir just to allow egg mixture to disperse. Cover with remaining cheese. Bake for 40-45 minutes on 350.
