cupsweet peas, frozen or fresh

cupTomatoes, Italian Style Stewed, undrained (Low Sod

pound, rawboneless, skinless chicken breasts, cut into large bite-sized pieces

smallonion, cut into thin wedges

teaspoonsBlack Pepper, Coarsely Ground

cup (8 fl oz)chicken broth low sodium
1/4
cupevaporated skim milk
1/4
cup, shreddedCheese, mozzarella, low sodium fat free
Steps
Sequence Step
1Cook noodles according to the package directions, adding peas during the last 3 minutes of cooking. Meanwhile, place undrained tomatoes in a blender or food processor. Cover and blend until smooth. Set aside.
3Carefully stir in broth and blended tomatoes. Return to boiling; reduce heat. Boil gently, uncovered, for 2 minutes. Stir in milk; boil gently for 3 minutes more or until sauce thickens slightly.
4Drain noodles and peas; transfer to a warm serving dish. Spoon sauce over noodles and peas; toss gently. If desired, top with fat free mozzarella cheese.
