Recipe Description Awesome! These are low calorie and low fat, with lots of flavor. Best when organic ingrediants are used. Options include currants, raisens and nuts!

Steps
Sequence Step
1Soak the oats and bran in 1 cup of skim milk for about one hour.
2Preheat the oven to 400 degrees.
3Spray muffin pan with olive oil spray.
4Combine the oat/skim milk mixture with the applesauce and egg whites, and mix until combined.
5In a separate bowl measure and whisk the dry ingredients together.
6Add wet ingredients to dry and mix until just combined. Do not over mix the batter or the muffins will be tough.
7Spoon muffin mixture into muffin pan. Bake for 15 MINUTES(check largest muffin by sticking toothpick into center) Remove from pan, cool and enjoy.
8These can be frozen and reheated in the microwave for a quick breakfast. Optional: Raisins Currants Nuts Apple
