Recipe Description You will love this healthy and versatile recipe! You can swap out the 1 cup of banana puree for any fruit or veggie-I've done butternut squash and kiwi (with seeds) and they were amazing! I use this to get my 2 year old to eat more veggies. A little peanut butter on top and they are a great "cupcake".

Sequence Step
1Preheat oven to 350 degrees. Grease a muffin pan or set out individual muffin cups. In a mixer, combine oil and splenda (you can substitute regular sugar or honey if you prefer).
2Add egg, bananas and vanilla extract. Mix to combine.
3Add cinnamon and salt.
4Add flax seed and the flour in divided amounts.
5In separate bowl, combine hot water and baking soda. Stir to dissolve baking soda and add to the rest of the batter.
6Mix the batter until all ingredients are well combined. Divide batter evenly among the muffin tins or cups. Cook 22-25 min or until toothpick inserted comes out clean.
7Cool slightly before removing. Enjoy!
