1Preheat oven to 350 degrees. Lightly coat a 9x13 inch pan with non-stick cooking spray.
2In a large mixing bowl combine cake mix and one package of instant lemon pudding. Next, add the water, whole egg, and egg white. With an electric mixer, beat for one minute on low speed, scraping sides of the bowl, until dry ingredients are well-moistened. Then, mix at medium-high speed for three minutes, until fluffy.
3Pour the batter into a prepared 9x13-inch pan, and bake at 350 degrees for 25-30 minutes, or until a toothpick inserted near the center comes out clean. Allow to cool completely.
4For Lemon Topping: In a large bowl, combine milk and second package of lemon pudding mix. Beat on low for 2 minutes. Fold in whipped topping. Spread over cooled cake. Store cake in refrigerator.
