Recipe Description I "invented" this recipe after having talked to a vegan friend of mine about how to bake without eggs and butter. Now it's my favourite cookie recipe. The apples only came in on the third itteration, and can be successfully substituted or supplemented with nuts, chocolate (make sure to get a good dark chocolate if you want to stay vegan), blueberries, etc.

Steps
Sequence Step
1Mix the flax, chia and hemp in a glass with the water, and leave in fridge until needed.
2Mash the banana in a bowl: This is your butter substitute.
3Add the sugars to the banana and mix until a creamy texture.
4Add the salt, baking soda and cacao nibs.
5Take the flax-chia-hemp mixure from the fridge. You''ll notice that it has turned all gooey; this is your egg substitute. Add it to the banana-etc.
6Wash the apple, then core it and dice it. Add the diced apple bits to the mixture and mix everything together well.
7Add the first 1 cup of oatmeal and mix well.
9Add the remaining oats gradually, until the mixture has a cookie-dough consistency.
10Sometimes I add vanilla to this recipe, but I have not decided if I prefer with or without.
