| 1 | In a large bowl, combine the first seven ingredients. | 2 | In a small bowl, beat the egg, bananas, apple sauce and vanilla extract. | 3 | Stir into dry ingredients just until moistened. | 4 | Fold in zucchini. | 5 | Transfer to muffin pans coated with cooking spray. | 6 | Bake at 325° for 20-25 minutes or until a toothpick inserted near the center comes out clean. | 7 | Cool for 10 minutes before removing from pans to wire racks. |
