large (3-1/4" dia) (approx 2 per lb)apple, organic, cored and diced (Fuji is recommended)

cupcranberries, dried, sweetened

tablespoonsDijon mustard

teaspoonssalt, to taste

teaspoonblack pepper

cup, sliveredalmonds, toasted

tablespoonLime juice, raw - or 1 TBSP

tablespoonsmild honey (Tupelo or Clover)

cup (8 fl oz)Greek Yogurt, plain, low fat

Steps
Sequence Step
1Cover Chicken breast with cold water and crushed garlic. Poach until cooked well with low-med heat, season with salt and pepper.
2While the chicken is cooking, dice celery and put into a big mixing bowl.
3Zest the lime and combine into the celery.
4Peel, core and dice the apple and squeeze the lime onto the apples to prevent it from browning.
5Toast slivered almond in low heat in a dry non-stick pan, watching it carefully to not burn. Almonds should be light brown toasted and smelled nutty.
6Combine Cranberries into the mixture.
7Drain Chicken breast and cut into bite-size chuncks. Combine into the mixture, season to taste with salt and pepper.
8Combine Yogurt, honey and mustard into the mixture, folding it into the chicken and veggies mixture. Check for seasoning again.
9Serve with: toasted whole wheat bread, or toasted split croissant.
