serving6 Pork loin Chops, Fresh boneless 1/2 inch thick

tablespoonSpices, ground cumin

tablespoononion powder

teaspoonsalt

teaspoonblack pepper

tablespoonsolive oil

tablespooncoriander, ground
4
ouncesHerdez salsa (homemade is best)
1
cupchicken broth (10.5 ounce can)
2
cups, slicedzucchini
Steps
Sequence Step
1Cut pork into bite sized cubes. In a skillet, just brown the pork in the olive oil; season with spices and salt and pepper. Add in remaining ingredients; excluding the zucchini. Bring to a boil. Turn heat to med-low and simmer for at least an hour; until pork is tender. Add in zucchini and simmer an additional 15 minutes. Serve with red rice and tortillas.
