Sequence Step
1Mix Yeast and sugar in 20gram of warm water and leave for 20min.
2Add 374grams flour, oil, salt, milk and 98gram warm water to the starter(step 1).
3Knead the mixture for 5 to 8 min. The dough will be slightly sticky when touched.
4Grease a tray with oil. Place the dough on the greased tray and pat a little oil on top of the dough as well.
5Cover the dough with a damp cloth(preferably cotton) and leave the dough to ferment for an hour.
6Divide the dough into 7 balls and leave it for another 20min.
7Set the oven temperature to 260 degree Centigrade and Baking selector to Top Bottom. Preheat the oven for about 10min. Roll the balls into rounds of about 6.5" to 7" in diameter.
9Place the rounds into the oven on a rack and bake till the rounds puff. When the top of the puffed pita bread starts darkening, it is time to remove. Serve hot.
