Sequence Step
1Sauce - combine mango, wine, sugar, ginger, lime juice and simmer of medium heat fo 5 min. Add cream, mix well, remove from h eat. Pout into blender and blend until smooth. Return to saucepan and simmer over low hear for 8 minutes. Add butter one piece at a time and stire until icorporated before adding the next piece. DO NOT BOIL THE SAUCE or it will separate. Season with S/P and keep wrm
2Coating - place nuts, panko, and basil in a food processor and process until fine. Spread on a plate. In a bowl, comine mayonnaise and chile paste and mix well. Lightly season teh fish with S/P. Evenly spread a light coat of the chile mayonnaise on one side of each fish fillet. Coat same side with nut/panko/basil mixture. Coat bottom of saute pan/skillet with enought oil to cover he bottom and heat over medium heat. Not too hot or the nuts will burn. Add the fish, crust side down, and saute 3 minutes until golden brown. Turn the fish and place in the oven (450 degrees) for 5 minutes until cooked through and firm to the touch. Place filles on warm plates, serve with the mango lime butter.
