1 | Mix together softened cream cheese, parmesan and minced garlic in a food processor. |
2 | Divide cream cheese mixture into thirds. |
3 | Place 1/3 of cream cheese mixture into plastic wrap-lined mini loaf pan. |
4 | Smooth cream cheese and cover with pesto. |
5 | Place another third of the cream cheese mixture over the pesto and smooth top. |
6 | Drain oil off of sun-dried tomatoes and chop tomatoes. Layer tomatoes over cream cheese. |
7 | Finish off with the final third of cream cheese mixture. Strike the pan on the counter to pack it down. |
8 | Cover with plastic wrap and refrigerate 24 hours. Serve with your choice of chips, crackers, or veggies. |
