Recipe Description This recipe is for 150 dinner rolls or 85 cinnamon rolls. Dough can be used to make pizza, rolls, breadsticks, cinnamon rolls (see recipe), hot pockets or anything with a bread crust.

Steps
Sequence Step
1In 20 qt mixer (commercial) combine warm water and yeast and stir with dough attachment on low speed. Keeping mixer running and on low speed, add the remaining ingredients in order listed. When adding flour and to the last 8 cups of flour, add to mixer small amounts at a time until dough pulls away from the wall of the bowl and has become smooth and pliable.
2remove dough paddle from mixer and cover bowl with foil or saran wrap and let dough rise until at least double in size.
3Punch down dough. Spray full size sheet pan with cooking spray (non stick) and pinch off golf ball size pieces of dough and place on baking sheet approximately 1/2 to 3/4 inches apart. Continue this process until you have emptied the bowl (used all of the dough). This will require more than one full size sheet pan, but you should get approximately 150 rolls from this recipe.
5Baste with melted butter and serve warm.
