cupsorganic wholewheat flour

cupraw sugar

cupblueberries, fresh, organic (optional)

cuporganic wholewheat flour

tablespoonsraw sugar

tablespoonsUnsalted butter (cultured or European style is best)

teaspooncinnamon, ground
Steps
Sequence Step
1Preheat oven to 400F
2Grease 12 muffin cups or insert paper liners
3If the coconut oil is solid, place the container in a bowl with hot water
4Mix the flour, sugar baking powder and salt in a bowl
5Mix the 1/4 cup flour, brown sugar, butter and cinnamon until crumbly
6Using a steel bowl sitting in a sink with hot water, beat the milk, oil, vanilla and egg.
7Add the flour mixture and stir until flour is moist. Batter will be lumpy
8Fold in Blueberries
9Divide evenly into 12 muffin cups
10Sprinkle 2 teaspoons of topping (from step 5) over the tops of the batter
11Bake for 20-25 minutes until golden brown and/or a toothpick placed into the center comes out clean
