Steps
Sequence Step
1Whisk egg, oil and coconut sugar together. In a separate bowl, combine the dry ingredients except for the crystallized sugar. Add dry ingredients to the wet mix and stir vigorously until well blended, or use a mixer to do so. The dough should be slightly glossy and fairly stiff. Roll balls of dough that are about 1 inch in diameter, then roll in the sugar, flatten to a disc shape and place on a parchment line cookie sheet. Repeat, making approximately 24 cookies. Bake in a preheated 300 degree oven about 15 minutes, or until the surface of the cookies is crackled in appearance.
