pepper, large (3 3/4 inch long, 3 inch dia)yellow sweet pepper chopped

pound, rawturkey breast ground

ouncesdiced tomatoes (2 cans 15 Oz each)

cupsBeans, great northern, mature seeds, canned

package (10 oz)Baby Spinach Leaves, raw

cup, shreddedCheese, mozzarella
Steps
Sequence Step
1Saute the onion and garlic briefly, add the chopped carrot, pepper, and celery.
2Add cumin and red pepper to the pan, saute briefly.
3Add turkey and break it up into crumbles. Cook thoroughly.
4Deglaze the pan with juice from the tomatoes, then add the tomatoes and the beans. Continue to simmer for 10-15 minutes.
5Put spinach in pan; it will almost instantly wilt. Serve with a tablespoon of mozarella cheese.
