Sweet Potato Shepherd's Pie

cans , 15 oz (303 x 406)corn, canned - drained

Usda default (100 gm - 4 oz)Beef, ground, 75% lean meat / 25% fat, raw

medium (2-1/2" dia)Onion, chopped

cans (14 oz), ready-to-serveTomatoes, canned, diced or petite diced

teaspoongarlic minced

tablespoonsbutter
1
teaspooncinnamon, ground

teaspooncloves, ground

teaspoonnutmeg freshly grated

tablespoonbrown sugar

teaspooncayenne pepper, more or less to taste

dashblack pepper (best if freshly ground)
Steps
Sequence Step
1Scrub and pierce sweet potato. Microwave 10-12 min or until tender.
2Cook beef and onion until meat no longer pink. Drain. Add corn, tomatos, spices.I used "Slap Your Mama" instead of cayenne pepper. Place in lightly greased baking dish.
3When sweet potato cool enough to handle, scoop out pulp and place in small mixing bowl with pumpkin. Mash with butter, salt, black pepper and brown sugar. Spread evenly over meat mixture.
