| 1 | Place one 2.5 to 3-pound bag of frozen chicken breast in crockpot. Add beans (make sure they are rinsed and well drained). Add corn (well drained). Add tomatoes. | 2 | Cover and cook on LOW for 6 to 8 hours. Stir every 2 hours (if possible) | 3 | Turn off crockpot and let it sit for 45-60 minutes (makes it less soupy if it cools a little.) | 4 | Shred chicken if desired. Serve over rice, or mixed with rice to use as filling for a burrito, could be used in a rice bowl or tostada salad. |
