medium (2-1/4" to 3-1/4" dia.)potatoes - Baby Red, leave skin on

tablespoonolive oil, extra virgin

teaspooncooking oil spray for large pan

teaspoongarlic powder

dashsalt, to taste

dashpepper, to taste

sausagesliced Chicken Hardwood Smoked Sausage, Hillshire
Steps
Sequence Step
1slice/dice veggies to preferred size - i like bigger chunks for this recipe
2heat tbl spoon of oil oil in skillet and put in all veggies except spinach, put spinach in mixing bowl and set aside
3and salt, pepper, and garlic powder to veggies and cook until they are carmelized, once carmelized throw in sliced chicken sausage (I use 1 link of Artisan fresh spinach and chicken sausage I purchase at Sam''s in gourmet section)
4cook until sausage is heated thru and then dump in mixing bowl with spinach. Toss this mixture to wilt spinach and let cool. Let this mixture cool for 5 minutes or so
5Add eggs to cooled veggie mixture and wisk together until eggs are well blended
6wipe skillet clean and spray until it is well coated. Heat and add egg mixture. let this cook on the stove top until cooked 1/2 way thru.
7At this point I run spatual around edges of pan and tilt so that uncooked egg mixture seeps down under and cooks - I continue this process until the top of the omlet is moist
8Alternate Step 7 would be to stick skillet in 350 degree oven and cook until omlet is done all the way thru around 15 to 20 minutes
9If cooking on stove top, place plate over top of skillet and flip omlet on to plate then slide uncooked side of omlet back into skillet and complete cooking
