cupsoy sauce, lite, (shoyu)

tablespoonssherry (cream sherry)

cups, wholesnow peas, ends snipped and cut diagonally

medium (4-1/8" long)green onions

dashsalt, to taste

tablespoonsolive oil, extra virgin or peanut oil

teaspoonssesame oil

teaspooncayenne pepper, more or less to taste

cupsrice, jasmine
Steps
Sequence Step
1Marinade: soy sauce, sherry, brown sugar, cornstarch and ginger. Add meat and marinate for 15-30min.
2Heat oil in wok or heavy skillet over high heat. add snow peas. cook until peas get bright green. 1min. remove and set aside.
3In hot wok; add half beef and cook. Add half of chopped scallions. remove once cooked. set aside.
4In hot wok. add remaining beef. add remaining chopped scallions. add left over marinade. cook.
5Once second batch of meat is cooked. Add first half of cooked beef and snow peas. Cook together for 45min. Turn off heat. Mixture thickens as it sits. Check flavor: add cheyenne pepper and salt to taste and
6Cook Rice before beef/snow peas. Once all is completed. Serve beef/snow peas over 1/2 c. rice per serving.
