poundBeef, ground, 80% lean meat / 20% fat, browned

cupCheese, cheddar, shredded

cupblack olives, chopped (optional)

can, 15 oz (303 x 406)tomato sauce

tortillas, medium (approx 6" dia)flour tortilla
Steps
Sequence Step
1Brown 1 lb ground meat in pan. Put half of the browned meat in a freezer container for another meal.
2Drain meat. Return to pan. Turn burner down to low.
3Add one small (6oz) can of tomato sauce, 1/2 cup of grated cheese, and 1/4 cup black olives (optional). If you would like onion, add that too.
4Once cheese has melted into meat mixtures, spoon one spoon of mixture into flour tortillas. Roll the tortillas and place with seam side down into baking dish. 8 enchiladas will fit in a pan.
5Top the enchilada with one can of Enchilada sauce. spread the sauced over the enchiladas so that all of the tortillas is at least coated.
6Top with cheese.
7Bake at 350 for 30 min.
8Let set for 3-5 minutes. Serve with lettuce, tomato, sour cream, and salsa or taco sauce.
