1This is an EDITED ingredients list. I was unable to enter the ingredients the way I wanted to. 1 lb heirloom carrots, sliced into 1/4" rounds 1/2 lb heirloom fingerling potatoes, halved lengthwise 1/3 lb onions, peeled and cut into 1" chunks 2 TBS melted butter (or other healthy oil of choice) 3TBS maple syrup salt and pepper to taste 1/2 cup chopped parsley
3Parboil the carrots and potatoes for 5 minutes; drain and pat dry, combine with onions in a large roasting pan.
4Melt the butter and combine with maple syrup. Pour over vegetables and toss well. Salt and pepper to taste.
5Roast for 40-45 minutes, mixing once half way through cook time, until lightly browned and easily pierced with a fork.
6Sprinkle parsley on top just before serving.
