Steps
Sequence Step
1Preheat oven to 350 degrees F. Prepare cupcake tins with nonstick baking spray.
3Grind or process sunflower seed to crunchy butter texture.
4Separate eggs into 2 bowls. Whites in large, yolks in a smaller one.
5In a small saucepan, melt baking chocolate and dark chocolate chips.
6Meanwhile, beat the egg yolks on medium high speed until thick, approx. 7 minutes. Reduce speed to low; add salt and 1/2 cup sugar until mixture becomes thick and creamy, approx. 8 minutes. Add melted chocolate and sunflower seeds; continue to beat with mixer on low speed.
7Add almond extract to the olarge bowl of egg whites. Beat until foamy, approx. 3 minutes. Add 1/3 cup sugar; beat on high speed until soft peaks form, approx 5 minutes.
8Fold egg whites into the chocolate mixture.
9Divide the batter evenly among cupcake tins. Transfer to the oven and bake for 15 - 20 minutes or until a toothpick inserted in the center of each cupcake comes out clean.
10Remove from oven; set aside to cool on baking racks.
